Oil selection on a modified engine is not the same problem the manufacturer solved. Their specification was balanced against fuel economy targets and a fleet average duty cycle. Your car has more cylinder pressure, more heat and a harder life.
A grade like 5W-30 describes two things: the W number is cold-flow behaviour, and the second number is viscosity at operating temperature.
The second number is the one that matters for a hard-worked engine in Florida. Oil thins as it heats, and the bearing film depends on it having enough viscosity at temperature to stay intact under load.
The right answer is engine specific and depends on clearances, which is why a builder specifies oil for a built engine.
For a modified engine, full synthetic, essentially without exception:
The one exception is break-in on some builds, where a specific break-in oil is required. Follow the build sheet.
After shutdown, a hot turbo bearing housing soaks heat with no oil flow. Conventional oil cokes into hard deposits that restrict the oil feed, and a restricted feed kills the turbo. Full synthetic resists this far better, and letting the car idle briefly before shutdown after hard driving helps too.
Racing oils often have strong additive packages and weak long-term stability, because they are formulated for oil that gets changed constantly. They are frequently the wrong choice for a street car.
The manufacturer's extended interval assumes factory output and average use. A modified engine should not use it.
Coolant temperature is not oil temperature, and oil temperature is what determines whether the film holds. If you do not have an oil temperature gauge on a modified car in Florida, that is the next thing to fit. Cooling.
